William Hinton Rum – Natural Fermentation – Limited Edition is a testament to the purest expression of Madeira agricole rum, carrying with it the wisdom of generations. Produced from the fresh sugarcane juice, this rum upholds the time-honoured values of traditional rum production.
What sets this unique rum apart is its commitment to purity and the preservation of natural processes. No artificial industrial yeast finds its way into the fermentation tanks. Instead, the sugarcane juice is left to ferment in its most natural form, relying only on the indigenous yeast present in the sugarcane itself and the environment, the very essence of the land, paying homage to nature. This natural fermentation process unfolds over 3 days, nurturing the character and depth of the rum.
Once fermentation is complete, it is distilled in a continuous column still with over a century of history, inherited from the Hinton Mill. This column still shapes the rum in a truly unique way. It is considered an “overproof” as it is bottled without dilution after distillation, preserving the rich herbaceous notes of sugarcane.
The aromatic bouquet easily encapsulates the essence of sugarcane, evoking the sensation of being amidst sugarcane fields, where each crushed cane releases its fragrant spirit. The high concentration of volatile oils, easily visible in the tears it leaves on the glass walls, leaves a lasting impression that lingers on the senses.
On the nose, a distinctive note of fresh and sweet sugarcane delights the olfactory palate, while its higher acidity releases a more refreshing aroma and a more pronounced astringency. The palate enters warmly and unveils a velvety texture, concluding with a rather daring spicy touch.

Aroma
Authentic and pungent on the nose, it showcases an intense tropical fruity aroma, with some sweet notes of fermented sugarcane. Indigenous yeasts have enriched it with citrus fruit notes, suggesting lemon and grapefruit. The tasting experience once again emphasizes tropical qualities with hints of melon and green banana, complemented by dry vegetal flavors and brief hints of anise.
Flavor
The light body and slightly sweet flavor contrast with the freshness, minerality, and persistence on the palate. Well-structured, long, and engaging, it finishes dry with a touch of spiciness.
